I am on a mission to bake a really good pie crust. This is a peach pie before it went into the oven. It is really pretty. It was really a big mess - it bubbled over in the oven and smoked up the house. The crust was ok, but not perfect, so back to the drawing board. This pie filling has peach schnapps in it....I better buy more schnapps...somehow the whole bottle disappeared?!! Of course the peaches were Colorado peaches from last summer, just waiting in the freezer.
I also baked a squash pie (you know, tastes just like pumpkin). This filling was yummy too, but the crust was under cooked on the bottom. Does anyone par bake pie crusts?
I have a lot of arugula growing in the greenhouse...I found a recipe for Arugula Pesto - doesn't that just sound great?! Will try it next week and let you know.
