We gardeners/farmers have a love-hate relationship with Spring. We are so encouraged by the warmer weather, the snow melting to reveal that good brown dirt, the birds chirping. But then there is that good brown dirt being blown to your neighbors, the return of cold weather, the wind, did I mention the wind? Nothing is turning green yet, but we can feel it in the air. Would love to be out there planting, but it's just too early yet. Ok, I'm going to the greenhouse to get a fix...be right back.
I just returned from a long weekend in Phoenix AZ, and I am totally jealous of their warm weather! But with all their gorgeous climate, I didn't see a single garden. Sure, I wasn't really in the residential areas, but people!!! They should have food growing Everywhere! I asked around, and most people a)didn't know where their food came from, or b) said it came from California or Mexico. So sad...
I got time to review a book I read years ago: Animal, Vegetable, Miracle by Barbara Kingsolver. It is one families resolve to eat Local for 1 year. I enjoyed looking through it again, and think you will too. Here is an example of eating seasonally during early spring:
Sunday ~ Herbed roast chicken with potatoes, beets, and carrots
Monday ~ Chef salad with boiled eggs or sausage, green onions and dried tomatoes, with bread
Tuesday ~ Chicken soup with carrots, kale and rice (or fresh bread)
Wednesday ~ Twice-baked potatoes stuffed with sautéed spring onions, broccoli and cheese
Thursday ~ Asparagus omelette or frittata and baby-greens salad
Friday ~ Pizza with dried tomatoes, olives, feta and sautéed onions
Saturday ~ Lamb chops, mesclun salad, asparagus, and rhubarb-apple crisp
Of course you could even have more variety if you had canned or frozen more from the previous summer. This was food she could obtain locally at her Farmers Market. Heavy on root veggies, meat, eggs. But did you notice the gem of the spring in there? Asparagus!!!! It is one of the first veggies up, and one of the absolute BEST! I can't wait!
